how to make cheese

hi fellas

I always wondered why it's been that there is no tradition of cheese-making in India. god knows why. But a few days ago, I decided lets try making cheese. I found this webpage : http://schmidling.netfirms.com/ccheese.htm



It said we need something called Rennet (a bacteria that's available in tablets/liquid) I didnt find it anywhere - read the food central, trinetra super market etc..



If anybody has some experience/info/views to share, tell me.

1. The inner lining of the fourth stomach of calves and other young ruminants.

2. A dried extract made from the stomach lining of a ruminant, used in cheesemaking to curdle milk.



Rennet, substance containing rennin, an enzyme having the property of clotting, or curdling, milk. It is used in the making of cheese and junket. Rennet is obtained from the stomachs of young mammals living on milk, especially from the inner lining of the fourth, or true, stomach (abomasum) of milk-fed calves. The preparation of rennet was formerly a part of the domestic function of making cheese; the inner membrane was kept in salt, dried, and, when rennet was needed, soaked in water. Now extract of rennet is made and sold commercially. It is usually prepared by soaking the tissues in warm, slightly salted water and straining and preserving the resulting liquid. Heat interferes with the action of rennet.



I think curd can be used as rennet.....(Not sure though).

I thought it was some stupid innocuous bacteria. Didnt look up the dictionary. :oops: thank god they've some less gruesome methods for preparing it now. curd didnt work. I tried ! :roll:

Oh u are talking about Paneer n stuff.....i thot u were talkin about the audible discharge of intestinal gas :lol: :lol:



my mom knws how to make cheese n curd....will ask her n let ya knw :)

hahaha :D :D I'd love to put up a thread on that ! but let me figure out this thing first. If u understand telugu, there is a funny haiku I can share with u. (Dont know how popular this thing is.. heard it over in school days)
